The Granola Bar, known for its freshly made eggs, avocado toast, sandwiches, wraps, salads, gourmet coffee and, of course, granola, is expanding to Westchester thanks to an operational partnership with restaurant owners Julie Mountain and Dana Noorily and Trilynx Partners of Westport, Conn.

Trilynx is an investment and operating platform whose founders have more than 15 years of experience in hospitality brands such as Disney and Starwood Hotels.

The new expansion plans also include a "to go" outpost of the eatery at 700 Canal Street in Stamford. The Granola Bar TO GO is scheduled for a spring opening and will feature the eatery's full menu for take-out, delivery and catering along with a grab-n-go fridge stocked with freshly made meals and snacks for diners on the run.

The Granola Bar was founded by Westport residents Julie Mountain and Dana Noorily in 2013 who admitted to Daily Voice that they "Thelma and Louise'd" it.

"At the time we were two mothers who just wanted a healthy place to eat and have good coffee," said Mountain.

They expanded to Greenwich in 2015.

And now, Rye is on the agenda where the entreprenurs say they are "excited to start feeding and caffeinating you."
